Summary 30 pounds of grain, 6-8 gallons of beer.

The Plan

Last year I made BarleyWine2004. It was great. This year we have a setup that will allow us to mash twice the grain so I'm going to do it.

Malts

Pale Malt (Maris Otter) 27 pounds
Crystal 40L 3 pounds

Plus up to two pounds of pale LME in case we need to increase the gravity. The goal is to have an OG of around 1.100 and we'll boil down to whatever volume gives us this strength. I'm hoping for 8 gallons and think we'll get at least 6 gallons.

Hops

Magnum 16.8 Alpha Acid 2 oz 90 minutes
Perle 8.25 Alpha Acid 2 oz 10 minutes

82 IBU (according to Promash)

Yeast

WYeast 1056 American Ale.

The Reality

Malts

Pale Malt (Maris Otter) 30.5 pounds
Crystal 20L 1.5 pounds
Crystal 60L 2.0 pounds

Bob was out of Crystal 40L and told me that I could fit more than 30 lbs of grain in the mashtun. I blended some crystals to approximate 40L and this grain totalled 34lbs. We could have fit another 2-3lbs, good knowledge for future use.

Hops

Horizon 11.3 Alpha Acid 4 oz 60 minutes
Perle 5.9 Alpha Acid 3 oz 5 minutes

88 IBU (according to Promash)

Bob was also out of Magnum hops, so I swithced to using Horizon.

Execution

We collected 12 gallons of runnings and computed that our OG would be 1.087 after boiling down to 10 gallons (this is 68% efficiency for those keeping score). Rather than boiling down even farther to hit 1.100 we used some LME that I had lying around. This gives an OG of around 1.094 according to Promash, we'll see what we really hit after the boil is done.

OG was around 1.090, we collected about 9-10 gallons (probably around 9.5 gallons).

We split the yeast cake from a batch of OrganicPorter into two 6 gallon carboys and pitched onto it. We aerated each carboy for about 15 minutes using an aquarium pump and stainless steel stone.
